Personality: Mando starts off as a pretty cold, uncaring character. Hey, he's a bounty hunter in the mean streets of the Outer Rim, he's had to be cold and calculating to survive. This is not necessarily a part of his Mandalorian creed: Mando is a member of a Mandalorian tribe in exile, who are hiding from the remains of the Galactic Empire. He's also a Child of the Watch, a group who follow the ancient ways of Mandalore, which is why he can't remove his helmet in front of a living being. This creed doesn't lend itself to easy bonding with others, as you can't exactly share a meal with friends or smile at anyone when your face is fully covered, and Mando mostly works alone. He begins as a prototypical aloof leading male, the Sasuke Uchiha of the Star Wars universe.

All that changes when he accepts a bounty for an unknown asset, which turns out to be The Child, or Grogu. For quite possibly the first time in his life, Mando has someone smaller and weaker depending on him, and while he and Grogu have their initial differences, they bond quickly and become inseparable. Mando accepts Grogu as his Foundling, which in Mandalorian culture is like having an adopted child. Mando himself was a Foundling, and so understands what it's like being separated from those you know and being small and scared out in a big, uncaring universe.

With Grogu at his side, Mando's harsh, cold exterior starts to melt. He finds himself helping people who can't pay him appropriately for his services, simply because it's the right thing to do, such as when he helps defend a Sorgan village. This usually involves violence of some kind, because hey, he's a Mandalorian warrior at the end of the day, but his moral compass starts to tick towards the Light Side instead of edging into Dark.

Later on, when Mando learns about the Jedi and that Grogu can use the Force, he truly wrestles with the decision of what to do with that information. By this point, he and Grogu are a unit, and neither wants to be separated from the other. However, Mando does what he believes is the right thing and tracks down some Jedi who can take over Grogu's training. It's a difficult separation for both of them, but Mando believes Grogu needs a chance to "be with his people." This is a vital part of Mando's personality: he does what he believes is right, even if it isn't what he wants. He doesn't particularly want the Dark Saber when it comes into his possession, but he makes efforts to learn how to use it and defends it from anyone who might take it from him.

Even when they're separated, Mando is still thinking about Grogu. In The Book of Boba Fett, we see Mando reunited with his original tribe, and melts down a Beskar steel spear to make a chainmail shirt for Grogu. This is significant because Beskar is a uniquely Mandalorian thing, used to make their armour, and the steel is passed down through families. Mando melting down some of his own Beskar to make armour for Grogu is something a father would do for his child.

Finally, when Mando tries to deliver the shirt to Grogu, Ashoka meets him and tells him how much Grogu misses him. She also asks if Mando wants to see Grogu because it's what's best for the child, or what's best for Mando. When faced with that question, Mando gives the shirt to Ashoka with the request to deliver it, and leaves the planet without seeing Grogu. He's gone from someone who was selfish and thinking mostly about himself to someone with empathy and compassion for others, as he leaves the Jedi planet to go help Boba Fett in an almost certain suicide mission (good thing Boba had a Rancor waiting in the wings).

In short, Mando is intelligent and calculating, qualities that make him an excellent warrior. He is also, however, learning to care about others, and how forming alliances with other people can strengthen you, rather than make you weaker. He is slowly but surely forming alliances across the galaxy, and coming out better for it. It certainly helps that he has an absolutely adorable adopted son who sunk all his points into Charisma.

Starter: I would like him to have an Axew because it looks like a tiny Mudhorn, the creature that he and Grogu initially bonded over. If that's not acceptable, then a Salandit will be fine instead.
